Vegan Boc Choy Stir Fry

Vegan Boc Choy Delight Recipe

We call it Boc Choy Delight since it features boc choy and is such a delightful treatment of this crunchy veggie. Feel free to vary the type stir fry sauce used. Teriyaki sauce, oyster sauce, spicy orange sauce all go well and provide a variety of flavors.

Ingredients
* 2 tablespoons olive oil
* 4 stalks of bok choy, chopped
* 1/2 cup mushrooms, chopped
* 1/2 cup red bell pepper, chopped
* 4 or 5 broccoli rosettes
* 4 tablespoons La Choy Original Stir Fry Sauce (or substitute your favorite)
* 2 cups rice (brown is healthier but you may use white), cooked
* sesame seed as needed (optional)

Directions
1. Cook the rice and keep warm aside.
2. Chop the Bok Choy, mushrooms and red pepper into bite size chunks.
3. Place 2 tablespoons olive oil in a wok over medium heat.
4. Place all vegetables in the wok and stir fry for 5 minutes.
5. Pour Stir Fry Sauce over vegetables, stir and cook another 3 minutes.
6. Plate rice and spread vegetables over the top.
Sprinkle with sesame seed if desired.
