Fried Zucchini Appetizer Recipe

 

Ingredients
* 1 cup soy milk
* 1 cup rice flour
* 1 tablespoon canola oil (or any mild flavor oil)
* 1 teaspoon cayenne pepper
* 1 teaspoon sweetener (agave syrup, sucanat)
* pinch of fine sea salt
* 2 large zucchini
* 1 large paper bag (or zip lock plastic)
* oil for frying (saffola or canola oil)
* 1 egg substitute (Ener-G Egg Replacer or Bob's Red Mill)

Directions
1. In large bowl mix together 3/4 cup flour, cayenne pepper, sugar and salt. Blend in the soy milk and 1 tablespoon vegetable oil. Add one egg substitute (follow instructions on box) and mix well. Set aside.
2. Wash zucchini and cut into 1/4 inch slices.
3. Fill a paper bag with the remaining 1/4 cup flour. Place the zucchini slices under water jut till wet. Drain excess water and place zucchini in the paper bag. Shake bag to coat zucchini on all sides. Set aside.
4. Heat 1/2 inch of oil in a skillet to 350 degrees F.
5. Dredge flour coated zucchini slices in flour/spice batter mix.
6. Fry until golden brown (only a few minutes). Serve hot.
