Miso Recipe
You have probably eatten miso but perhaps did not know it's name. Miso is the soup that is served prior to the main course at Japanese restarants. It is very easy to make although it has a few ingredients that may be unfamiliar to you. Most of the ingredients can be found at orential markets or other markets that sell vegetarian or vegan products.
Ingredients
* 4 cups water* 1/3 cup miso paste
* 3 green onions (scallions), chopped
* 1 tbsp shredded nori or wakame seaweed (optional - this will give a faint fish flavor)
* 1/2 block firm silken tofu, cut into 1 inch cubes
* dash soy sauce
* 1/2 tsp sesame oil (optional)
Directions
1. Bring water to a slow simmer and add seaweed. Allow to simmer at least 5-6 minutes. If not using seaweed, begin with next step.2. Adjust heat to very low (just below the boiling point) and add the rest of the ingredients. Stir until miso is well dissolved. Do not boil the miso, this will change the flavor of the soup. Cooking time should be around 10 minutes after reaching temperature (just below boiling).
Makes 4 servings.
For variety, try adding any or all of the following:
* 3 cloves garlic, minced
* 1 tbsp soy sauce
* 3 or 4 whole sugar peas
* dash of crushed red pepper
* 1 tsp sweetener (brown rice syrup
