Vegan Potato Patties Recipe

 

Ingredients
* 10 russet potatoes, peeled and shredded
* 5 cloves garlic, crushed
* 1 onion, finely diced
* 1 tablespoon dill (dried or fresh if available)
* 2 tablespoons lemon juice
* 1/4 cup olive oil
* 2 cups dry bread crumbs
* 2 tablespoons rice flour
* salt and pepper to taste
* canola oil as needed for frying

Directions
1. Mix potatoes, onion, garlic and dill in a large bowl. Stir in lemon juice, 1/4 cup of olive oil, flour, bread crumbs, salt, and pepper. Knead just until mixture holds together.
2. Heat about 1/4 cup canola oil in a skillet over medium heat. Drop spoonfuls of potato mixture in hot oil. Cook approximately 4 minutes per side, or until golden brown. Serve hot.
